Risk assessment
The risk assessment is a scientific evaluation of microbiological, toxicological and nutritional aspects of exposure of a substance or product. It characterises products hazardous to health, a valuation of exposure and it characterises the risk. There are some dangers to the risk assessment – what is the problem and why is it a problem? There is also an element of exposure – who might be exposed?
Risk managementManaging the risk is part of the risk analysis where the risk assessment determines the level for acceptable risk. To manage a risk is also a process where alternative procedures are weighed in the light of the risk assessment and where the relevant initiatives of control are probably chosen.
